Red velvet roses

Realize it's been so long since I've baked red velvet cupcakes. The hype for it is incredibly great! Since I had extra cream cheese that has been sitting in the fridge since forever, I decided to bake them!


(Oh I had to run downstairs just to snap for photo before it rained, proves my dedication!)

Oreo filled cupcakes

Were you thinking blueberry jam? Squid ink maybe? Pardon my dying nails. 

This cupcake was inspired from oreo waffles I had in school. Crushed oreos with condensed milk spread, sandwiched together with a hot crispy and chewy waffle. It was very addictive and a way to ease the stress in school. To stop the hunger too!




Filled with oreo butter in the cupcake, finished with buttercream icing as well as another plop of oreo butter on the top.

Pandan chiffon cake

Always wanted to try out a chiffon cake but I never did knowing that it requires a tremendous amount of eggs! That's like cholesterol x10000000000000000 omg noooo. Finally decided to try it out when I found the essential ingredients I needed at home!

Instead of artificial flavouring, I harvested fresh pandan leaves from the garden, grind them up and extracted the juice from them. It was hard work for that 1 tablespoon of juice! And it wasn't enough...so next time use pandan paste instead.



Also, my chiffon pan was tooo small for the recipe I tried :( It was basically rising like crazy in my oven! 
Mistake 1: Not using pandan paste
Notice it's more of a yellow colour compared to the green. That's because natural fresh juice from the pandan leaves doesn't give you the pretty green colour you normally see. Partly my fault for having too little pandan juice and too many yolks hence yellow. 

Mistake 2: Big air holes
Notice that the holes in the cake are rather big? That's because air got trapped and didn't release while it was baking. And my cake collapsed at the bottom. That portion was rising above my pan so I guess there wasn't enough support for the cake.

Mistake 3: Cake got stuck in the pan
I think there's something wrong with the pan? Perhaps lost its ability as a non-stick pan(?) Hence I wasn't able to capture the cake as a whole :(

Still, my family liked it :) There's always room for improvement!

Buttermilk biscuits and Jam

Have been wanting to make biscuits but didnt dare go near the amount of butter being used in it. But hey it wasn't that bad. Was just like regular baking. They came out so pretty and nice smelling! A super successful first attempt!



You can see the different layers, tells you how flaky it is! I even homemade my jam, with grapes. I didn't have berries so I made do with grapes and it works the same! Yum :)

I can feel my fats jiggling already ha ha.

Banana Loaf cake

Have this thing going on with loaf cakes these days because its so easy and convenient to make! Smaller in size too so it finishes fast and not get wasted :)





This baby was so good! It looks pretty dense but its spongy and moist at the same time. You can see and bite into bananas bits too because there were some chunks of bananas. Not totally smashed up and gooey.

Apple Berry Oatmeal bars

Chinese New Year just passed recently (okay maybe a month ago) and I'm sure many still have lots of left over goodies sitting on the counter. And everytime you are hungry or crave for something sweet, you will never hesitate to reach out and grab some. The worst part? THEY ARE SO ADDICTIVE. It's crazy how much harm they do to you in terms of calories x.x

So I decided to make my own snacks they are nutritional and also able to satisfy the crave!


These oatmeal bars were filled with apples, sliced thinly and cooked under low heat with some blueberries, brown sugar and cinnamon. Cinnamon is the best spice to go with anything sweet! Used oatmeal (instant) instead of just flour. Rolled oats would be a healthier option but I wanted to use what I had in hand :)

Oatmeal
- Good source of protein
- High in fibre
- Contains minerals, vitamins and antioxidants 
- Complex carbohydrates (keeps you full for a longer time)

Blueberry Lemon Loaf cake

Made this loaf cake to end my life in college. It's extremely sad yet rewarding to know you've completed and fought through three years of craziness for a diploma. 


Okay enough tears and more about the cake! I went a little blueberry cray because it was the blueberry season last month and I was consistently having them in my fridge so I could munch on them as a snack! Then I thought, why not make a cake? Berries in cakes are awesome btw. (Strawberry short cake is one of my fav) Topped with lemon drizzle and waa la! This cake was so moist and yummy with a tang, just the way I like it.

Cream Cheese Brownies

So my previous post was in....Dec 2012. Sorry for leaving this space for the longest time when I told you guys to stay tune for those awesome brownies! The truth is I have been busy okay maybe 90% lazy to enter this space and to bake and take pictures of them. I've been using my phone to capture my bakes because...again I'm lazy to get the camera out.


Did these brownies before my break during December for my classmates as a Christmas gift together with the sugar cookies in my previous post :) Received really good feedback and smiles from them, really what I love about baking! 
It's a dark chocolate brownies with cream cheese swirl. I mean who doesn't like cream cheese right? Everyone LOVES them but they are crazy fattening so remember to eat healthy too!
